Is there any way to make Photoshop not append ‘ copy’ on the name of a file when you do a Save As? 99% of the time I want to overwrite an existing file and have to manually remove the ‘ copy’ from the filename. (i.e. when editing PSD, then I’ll do a Save As JPEG, go back and tweak the PSD more, then Save As JPEG again.)

In your case no.

then I’ll do a Save As JPEG,

JPG doesn’t support all of the features that PSD does. For example, and I’m just picking one, layers. If your image has layers, it is automatically going to save the file flattened, in which case, it is a copy. Photoshop automatically puts "copy" in filenames when you are saving to a format that doesn’t support features present in the current image.

You can avoid this by using Save For Web instead.
