Grayscale Mode in Photoshop

I have a full color logo/photo that I turned into grayscale (I simply changed the mode to grayscale in Photoshop 6.0). Is this logo/photo now one color? If not, how many colors are grayscale photos?

A Grey scale has one channel, containing 256 levels of grey (if 8-bit).

So if I am sending this grayscale to the printer it would be considered a one color print job?

Yes,

Assuming the printer uses a non-digital printing method, and that there are no other colours specified elsewhere in the layout that the Greyscale image is placed in.
