generally printers have better control converting than you do in Photoshop. Ask the printer about it, supply a match print. Many colors in RGB are out of the CMYK gamut, but the printer will have your idea in vision to work from.

They are all set up as RGB, and will be on a CD that I will give to the printer. Should convert them to CMYK before I put them on the CD, or leave that to the printer?
