It is probably easier to see and judge the luninance of the channeis in grayscale than in color.
You may, if you wish have the channels display in color. Go to Edit/Preferences/Display & Corsors and put a check in the Color Channels in Color check box.

Every digital image is made up of one or more channels. Any mode other than bitmap can have more than one channel. (A channel can be used for more than just image content, such as for saving selections or creating mattes.)
An RGB image consists of (at least) 3 greyscale channels, one for each colour. When you select just one channel, you are viewing just the content of that channel, and so see the greyscale content.
In Preferences, you can set channels to VIEW in colour – but their content will still be greyscale, even though you will see colour on screen
