I have PS5 on my laptop and the upgrade to PS7. I once tried to remove PS5 to save space, but PS7 complained and so I put it back. Recently I have upgraded again to PS8 (CS), will there ever be a point when I may remove either or any of the previous versions? (I never use them)

You should be able to remove both 5 and 7. You will need to keep a disk (or both) in case you need to re-install the CS upgrade to show to the CS upgrade install that you are good to upgrade.
I upgraded from 6 and now only have CS on my machine.

All versions of Photoshop are, by default, installed into their own directories. If you accidently installed version 7 over the top (that is, in the same directory) of version 5, this might explain why an uninstall of version 5 complains.
If I were you, I would uninstall them both, reinstall 7 and when asked for verification of media (to validate the use of an upgrade version), simply pop the v7 cd out of the drive, put v5 in and when verification is done, remove 5 and put 7 back in to continue the installation.
You don’t need previous versions to be installed on the machine to make an upgrade function.

By all means remove the earlier versions. When asked about removing shared files say ‘NO’
