Embedded colour profiles

When I open an image in PS V7 taken with my Canon camera I get a warning:-

The document has a color profile that does not match the current RGB working space.

Embedded sRGBIE61966-2.1
Working Adobe RGB (1998)

There are 3 options

Use the embedded profile (instead of the working space)
Convert document’s colors to the working space
Discard the embedded profile (don’t manage color)

What’s the best way to go? Should I (could I?) change Photoshop to the catchily named sRGBIE61966-2.1?

My recommendation would be to use sRGB as your working space. There are several advantages to this, the main one being that most printers, monitors, and cameras use sRGB directly.

Adobe RGB may have some advantages representing very saturated colors, and for representing work destined for printing. The main disadvantage of Adobe RGB is the colors will appear washed out if an Adobe RGB image is inadvertently opened in a non color aware application, such as a web browser.
