I’ve created a colour profile for a printer using Profile Maker, (using the eye-one). I was wondering what the correct thing to do would be in the following scenario, when opening an image in Photoshop that DOES NOT have an embedded profile, what should be done? i.e. Left as is, converted, or what?

You help would be greatly appreciated!

You help would be greatly appreciated!

Assign AdobeRGB or sRGB to the image. In any case, DO NOT assign the printer profile! Use the proof setup and select your printer profile there.
