Is there a way to create an adjustment layer that affects only one layer (let’s say the one directly below it) and no other layers?

I have several overlapping objects/layers each needing its own adjustment.

Yes. Go ahead and create your Adjustment Layer. If it not immediately above the Layer, that you want it to influence, drag it there. Press and hold the Alt key, and move the pointer to the separation line between the AL and the Layer to be adjusted. The pointer will change to double overloapping circles (top white, bottom black). Click, and a bent arrow, pointing down to the adjusted Layer will appear in the far left margin of the AL, plus its title bar will offset to the right. Done. Repeat for each Layer that you wish to adjust separately.
