The printpackage function in CS is not very versatile as it only allows a few paper sizes. Is there anyway around this?

That has nothing to do with Photoshop and everything to do with your print drivers. If you are set up at home, with only an inexpensive home ink jet – that is what you get. Would suggest installing a postscript print driver. With this you can print to file. You still won’t get a 60 inch wide sheet through a Lexmark Z45 though. You will have to explain in greater detail what you are trying to accomplish.
