There are three lasso tools in PS 7.0: lasso, magnetic lasso, and polygonal lasso. If you right-click on whatever lasso tool is showing on the tool bar, all three will appear in a fly-out. The lasso is used free hand, the magnetic lasso affixes points based on the contrast of color (which is set in the horizontal tool row), and the polygonal lasso makes selections in straight lines.
The Quick Mask icon is right below the foreground and background color icons. When in Quick Mask, you paint the area to be selected with the brush tool, and when you leave Quick Mask the area you’ve painted will be a selection.
You need to learn to find and use tutorials. There are many on the web. There are several versions of Photoshop, so the best way to search is (in Google) type in "Photoshop 7.0" That brings up results. Then, click (at the bottom of the page) "Search Within Results" and type in "Magnetic Lasso". That brings up tutorials on the magnetic lasso in the format that you see in Photoshop 7.0.

A second option for you is to buy a book. Since you are using Photoshop 7.0, you can probably find a used book for cheap. Amazon has "Adobe Photoshop 7.0 Classroom In A Book" for $6.90 used. "Photoshop 7.0 for Dummies" is $7.48 used.
