1 file, 2 images, 1 colour for each image?

I need to create the above subject using two pantone colours. I know how to get the two pantone colour channels, and apply them to the images. Im confused about what file type i open the new document as???
The finished document is going directly to the printers do i save it as a .eps file??

Ben,

You need to save as DCS-2 EPS, Multiple file with colour composite, 8-bit Tiff Preview and ASCII encoding.

Start with a CMYK file
