I’m new to working with color profiles and trying to understand something.

Is it a good idea to set my View/Proof correctly at the start of a project or should I work in ‘Working CMYK’ and only at the end check what it looks like ?

Ideally you would work in RGB and convert to the CMYK profile you need at the end.
