Have you tried using the gamut warning feature that is on the View menu? When you are in CMYK mode, it will highlight the colors that will not print and then you can use whatever adjustment tools you need to in order to get the most out of your photo. I was quite surprised when I tried this on one of my images that I had modified extensively and was very pleased with. But when I turned on the gamut warning and adjusted the picture, some of my bold colors were much more subdued much like they show in my prints. There is a little help on the gamut warning in the Photoshop help system.
