I would like to convert a colour image to B&W then restore only a small part of the image back to it’s original colour.
For example, keep a dress as red but make the rest of the image B&W. What workflow would you suggest?

There are a few ways to do this. I would suggest putting the parts you want in color on one layer and the parts you want in B&W on another. Make the B&W layer "grayscale" by using Desaturate or Channel Mixer with Monochrome checked. I prefer the latter because it gives you more control over the grayscale look.

Page 246 of Scott Kelby’s CS book for Digital Photographers has an easy technique for doing this.

1. Image – adjustments – desaturate
2. Toolbox – choose history brush
3. Choose an appropriate soft edged brush from the
brush picker.
4. Paint over the area you want in color. You
may use a lower opacity if you want to reduce the
intensity of the original color. You may need to use
the zoom tool and different sizes of brushes
depending on what you are painting back into the
image.

or……
– drag the bkgd layer to the new layer icon at the bottom of the Layer palette.
– go to Image , Adjust, Desaturate
– click the Layer Mask button at the bottom, choose a Brush, make black the foreground color, and magically wipe away the areas you want to have color.

this is just another way of doing what you want.

Adjustment Layer>Hue, Saturation, Brightness. Drag saturation slider all the way to the left. Paint black into the adjustment layer mask the areas you want to maintain color.

You could also choose the Channel Mixer Adjustment Layer for this.

A Channel Mixer Adjustment layer would actually give you more control over the quality of of the B/W areas. Would take a bit longer than a HSB layer, but might be worth the result.

I’d copy the layer. Then desat the top layer then use the eraser tool to wash away those areas you want colour to poke thru from the lower (colour) layer.

There’s an easy way of doing that, it’s just to select with a combination of marquee and/or magic wand tool the part of the image you want in BW, you go to Image/Adjustments/Desaturate (Shift/Ctrl/U) and the selected part will loose all of it’s colour information. There are many other ways, more precise, but this one is the easiest.
