I have ACR 3.0 and a Canon 20D. I’m wondering why ACR can’t display files that have been shot in "B&W" mode in the 20D. For that matter, many of the custom RAW settings are ignored by ACR. Is there a reason?

The reason is that these aren’t ‘RAW settings’. They are options for post-processing. Canon probably stores these data as the propriety EXIF data (if they are stored at all in the RAW file), that’s why ACR can’t use them.
