how do you turn a regular colour image into a black and white one with PS7

How many ways do you want?

1. Image/Mode/Desaturate. Quick and marginally effective.

2. Image/Mode/ Grayscale. Almost equivalent, but it changes the image from an RGB image. OTOH, it doesn’t leave the image as flat looking as Desaturate.

3. Go to the layer palette and add a hue/saturation adjustment layer. Take the saturation down to zero Same effect as with
image/mode/grayscale, but without altering the actual image.

4. Use the Channel Mixer. Open it up, tick the monochrome box and adjust the sliders. Keep the total percentage around about 100%. A good place to start is usually Red 40% Green 60%. Work from there.

That should keep you busy for a while.

Or switch to LAB colour and copy the lightness channel – tends to produce a better result.

In addition to all the suggestions already given you might find my discussion of using color film to make b&w useful. It is mostly concerned with emulating color filters.
Just follow the tips link on my home page and look for the one about b&w film being obsolete…

that’s not really as complicated as it sounds
