For ease of use, nothing I’ve tested beats Arcsoft’s Panorama Maker (used to come bundled free with Nikon[?] cameras I think.)
and the freeware Autostitch
http://www.cs.ubc.ca/~mbrown/autostitch/autostitch.html which has the added benefit of working in 2D and being virtually foolproof.
Just be sure to set the output options to large/best image quality in both cases.
Autostitch suffers more ‘stretch’ distortion at the edges but does an amazing job of seamlessly stitching huge numbers of images without any user assistance.
Panorama Maker has a near perfect wizard-type interface, and is very easy to use. Distortion is low if you choose the correct focal length, but you cannot stitch vertical & horizontal pans simultaneously. -alu

To repeat:

One of the most powerful tools is Panotools. It’s free, but a huge PITA. So, you get a frontend tool to make it easier. It still has a learning curve, but it’s very powerful too.

The most popular frontend is PTGui with PTAssembler a close 2nd. They are shareware though. The free frontend is Hugin. It doesn’t have the speed of updates or the support, but it is free.

If you can get a copy of Canon’s PhotoStitch it’s very good. Comes bundled with their cameras.
