It depends on what kind of EPS files they are.
There are two completely, radically different ways to create EPS graphics: "vector" and "raster".
"Raster" means "made of pixels." A scan or a digital photo is a raster image; it is made up of individual, discrete pixels. Photoshop is primarily a raster program.
"Vector" means "made up of mathematical descriptions of lines qand curves." Vector images are not made of pixels and can be enlarged to any size with zero quality loss. Adobe Illustrator and CorelDRAW are vector programs.
You should open vector EPS files in a vector program. You should open raster EPS files in a raster program.
If you open a raster EPS in CorelDRAW, you can not edit it.
If you open a vector EPS in Photoshop, it will be
"rasterized"–converted into pixels–and you will not be able to edit it as vectors any more.
