help on paths

Is there a way to make a path that is not closed; just a single line or curve with two ends, that can be stroked, etc? Lets say I want to make a curved path for text, it seems the only way to do so is to close the path. Am I missing something?

Sure, just use the pen tool in ‘Path mode’ (set from the Options bar in CS) then stroke from the Paths palette fly-out
