use the magnetic lasso to go around the person very carefully, use the magic wand to add/minus, clean up the selection
check the mask by using the squares at bottom of tool bar, brushes can be used on the mask
feather the selection for a softer blend
make a new adjustment layer, select hue-saturation, move center slider to left
at bottom of the palette click the mask from selection button

Hi

If i use this technique my image changes to strange black and white a lot too soft constrast and looks like a kind of infrared photo.

Any tips?

you might also try using the sponge to desaturate the person, leaving it in greyscale

yeah read my post
channel mixer is not the best choice for this

just FYI on turning images to B&W
this method is the best way to control the values

Forget selections

Desaturate the entire picture then use a fairly soft edged history brush to bring the color back where you want it.
