What is the easiest way that I can add captions to the bottom (or top) of some of my pictures? Not too fancy – just black text on white backgrounds.

Create a text layer. Usually choosing black or white type will make the letters stand out enough to read.

If necessary, you may decide to create a solid color background layer to back up the text. It’s more interesting to use effects and styles. For example, if the text is on a dark and light background, make your choice of black or white type, and then either a drop shadow to white type or outer glow to black type

no need, the text tool auto creates a layer of it’s own for you!! if you want the text under the image and not on top of it you have to make the canvas bigger first
make sure you have the colors set to default before you do this, because you want white background
(you could also use a transparent background, but if you print on white paper it will look the same printed)
