If you have been specifying PS7 in your search it is hardly surprising as it now two versions old. Just Google for Photoshop/Photoshop elements DVDs. They may be for CS or CS2 but barring the new features in the later versions you will still find them useful. What about web based tutorials? I know that you’re wanting DVD’s, but I have online classes which you might like, and the Summer Session is just now starting. These are Message-Board-based and the lessons, in PDF format, are emailed to you each week.

I am currently offering the following:
Photoshop Launchpad A, Photoshop Launchpad C, Photoshop Photos into Artwork, and Photorealistic Painting in Photoshop.

These will work fine with version 7, though you really should consider the upgrade to CS2. My classes are not appropriate for Elements.
