I am trying to create a curved line in PS 7 using my pen tool. When I fill it in with a color and view the actual pixels, the edges are jagged. How can I make them smooth . . . and not blurry?

A Photoshop picture is made of pixels–little squares of color. You can never get a perfectly smooth curve with pixels; can’t be done.

What are you using this image for? Web? Print?

Use illustrator, not photoshop which is primarilly an app to deal with raster images hense the woolyness

What are you using this image for? Web? Print?

I am using this image for print. I am learning that I really need to expand my knowledge of Illustrator. I love Photoshop . . . I wish that I could do everything it it but, I am doing some minor graphic design work for a friend and thus, realizing I need to pick up some books!
