Tutorials or Help for working with RAW files

When I process the raw files of my Canon G3 in Photoshop CS, I run into a window for which no help optionis active. Since I would like to learn how to use the various settings (adjust, detail, lens and calibrate) in an optimal way, I am looking for explanations what all these things do.
