The pen tool or a lasso tool. I’ve gotten good result using the Polygon Lasso tool with close anchor points and a high zoom view. Feathering between
0.2 pixels and 1.5 pixels works great depending on resolution.

Another option is to use a mask which can be added to or subtracted from by using the paint brush or eraser, all without affecting the original layer.

It all depends on the background.
Pen tool, lasso tool, wand tool or extract.

Well as no one has mentioned the magnetic lasso tool i will… I’d use the magnetic lasso tool (it works best if you have a flat bg)
