I have a picture of a Japanese symbol.
The background is grayish the symbol is black(ish).
How could I force grayish to white and
black(ish) to black using Adobe Photoshop5?

Use Image>Adjust>Levels, click the black eyedropper button and then click on the black area of the symbol.

Do a similar procedure, using the white eyedropper for the white areas, and fine tune using the triangular "slider" adjustments under the "mountain range" looking histogram.

If you want to have a little more control over the final result, you can. The "mountain" will have two peaks, a large one on the right for the light colored background, and a smaller one on the left for the lettering. The black slider should be partway into the small peak, and the white one partway into the large peak. The gray slider should be between the two peaks.

BTW, I usually recommend using curves over levels, but levels does an excellent job for this particular task.
