There must be a way – I just can’t get my brain around it. I was thinking of taking 10’s of photos and then putting them together so I get a people free image.

The real question seemed to be the OP’s inability to take a shot of "The Little Mermaid" that is unobstructed by other visitors. The solution is when to take the picture, not what do with a picture taken at the wrong time. He’s just going to have to get there early in the morning before the crowds arrive.
I can’t believe he’s serious about patching together a person-free image. I think he’s just venting frustration.
Look at John J’s answer. As I said there are times to take photos and times when not to do so – In particular that photo as the Photographer needs to stand on the dry land and then early in the morning the sun is right behind the ‘Little Mermaid’ – not a lot of use to take a photo from behind – now think man, it can be done but HOW apart from spending an awful lot of money.

I’ve been there (my brother lives in Denmark), and taken an unobstructed picture of "The Little Mermaid", but I forget what time of day I was there. People do it.
The statue is not that large (about 3 feet high?) , and she’s several feet above ground level on a rock, so you don’t need that big of window to have a shot. If you’re there in the summer, the days (the sunlight) are very long.
The pissing pig in Aarhus is a better picture anyway.
