If i do a whois on easyspace.co.uk then the domain is free, on some other sites it says its taken, but has this information:

Registrar: NETWORK SOLUTIONS, INC.
Whois Server: whois.networksolutions.com
Referral URL: http://www.networksolutions.com
Name Server: NS.JUMPLINE2000.NET
Name Server: NS2.JUMPLINE2000.NET
Status: REDEMPTIONPERIOD
Updated Date: 20-jul-2003
Creation Date: 12-jun-1999
Expiration Date: 12-jun-2003

What does this mean exactly?

The redemption period is the time NetSol will hang onto the domain to allow the owner to renew it. Then it will go to Pending Delete for 5-7 days. Then if its a good name some company will buy it before you have a chance. I know I just went thru it with fancyglass.com. If you want to try and get it use a backorder service, godaddy has one for $18.95. I have heard of others that go up to $69. Good luck.
