Is there a way to select just one colour? then copy/paste it to a new page?
Then from there, change the colour?

The sampling tool (with sample pixel dimensions 5×5, 3×3, or single pixel) assigns the sample as the foreground color which you can then use to fill any selected area.
The replace color command does not replace a color in its entirety. It replaces one or more of the saturation, hue, and luminosity attributes depending on the blend mode you choose for the operation. There are four choices on the options bar(Hue, Saturation, Color, and Luminosity).

And here George means by "It replaces one or more of the saturation, hue, and luminosity attributes" that it alters one or more of the saturation, hue, and luminosity attributes.
It is a select>color range combined with a Hue/Saturation alteration all within one dialog.
