Complex Selections

I have been using Photoshop for several years now and I have never mastered complex selection. I want to select a Longhorn Steer from a dark background like autumn leaves, sheds and other objects. This photo does not have good contrast.

How about sharing your little secret with me? My best luck has been using the Polygonal Lasso and then clean it up – pretty time consuming.

Using Photoshop CS2.
