I’ve been using that method, but when I stroke text again, that same red swatch appears.
I want to change that to black so I don’t have to pick the stoke color I want each time.

When you Edit>Stroke a selection, the dialogue box should show a little color swatch, in your case it will be red. Double click on this to activate the colour picker and select another one. It’s the same if you are useing the stroke in Blending modes.

I have just reread your second post. You are using the Stroke option in the layer Blending properties,a layer style, not in Edit>Stroke, yes? To change the default red to another colour involves creating a new style preset. Pick your new Stroke colour, click on new style and give it a name. (Black stroke?)
This new, named style will appear in your Styles palette,( Window>Styles). To use it, just type your text and click on the Black stroke icon in your Styles palette.
