Why is it that every time I open a JPEG in email that both Adobe and ACDS have gifs and jpegs that I have previously viewed?

In other words, after I download the jpeg in a email I can click the "next" arrow and there are pics/gifs, etc, from websites that I have previously visited.

How do I correct this?

You are scrolling through the images that are in that folder. Re emails, unless you have saved them to a specific location they will be a link to them in the folder where your mailer "identities" are kept, for OE it will be something like C:\Documents and Settings\User\Local Settings\Application Data\Identities\{2C7A8CD0-78FA-427F-BF86-AE333A20DC52}\Micro soft\Outlook Express. The images themselves could be anywhere and they will not be found by doing a search on their file name. "Messing" with these folders DBX files could screw up all your mail folders, not recommended.
For web images, they could be in one of several folders such as C:\Documents and Settings\User\Local Settings\History and it is this folder’s content that allows you to work off line and display the sites you visited in the past.
To clear these, if using IE, got to Tools>Internet Options>General>Temporary Internet Files>Delete files.

All browsers "cache" web pages, images etc., that is how you view them on your PC, you download them to, and view them from a temporary folder. This is how you are able to work offline. Again, all browers will have the facility to purge this folder when you close the browser, do a search in Firefox help for deleting history or temporary files.
