Take a look at Duotone. File>Mode>Duotone. Select monotone if you wish to print in a single spot colour or Duotone if you wish to print in Black + Spot colour.
There are sample duotone curves on your disk. Worth investigating them.
If you wish to colour only a section of an image in Spot colour, you will need to add a spot colour channel from the channels palette and then cut/paste the area from the Black channel to the colour channel.
Yes Patti – the answer really depends on the kind of work you are doing. If you want ROUGHLY that color, and that will do then go with Chris, run out a couple of proofs to get it near as you can. If its a specified Pantone that you really need, ie its your clients brand color then you need to produce a spot duotone channel file and send it to a specialist printer as Len has said.
