What’s on Layer 1? It doesn’t make sense to me that turning off visibility on a non-text layer would make the text disappear.

What color is your text now?

Highlight the text by double-clicking in the text layer in the Layers palette and click on the color box in the Options Bar to get the Color Picker that will allow you to change the color.

Okay, double-clicking should have worked, but instead, click on the little icon on the Options Bar that gets you the Character palette, You should be able to do it from there.

If the text has color applied in the layer styles, you will either have to disable or change the layer style color – not the text color itself.

You need to double click on the T, not on the layer itself. I assume this is what you were doing.

My bad. Should have been more specific.

When I want to change the color of text, I click once on the text layer to highlight it, then I select the Text tool from the toolbar. I now go to the text on the picture, and using the left mouse button, click and drag it along the entire line of text to highlight it. Once I’ve done that, I go to the color palette and select the color I want. This changes the text color. I then click on the text to deselect it and see how the new color looks.
This may be a slower method than the others have suggested, but it has always worked for me.
