Triple-click on the percentage value shown at the bottom of your document window and type in any value you want (within Photoshop’s built-in limitations, of course).
Unfortunately, you can’t save preset custom magnification settings…unless they added that capability in PS CS3. Don’t have it, don’t know.
In preferences, set the screen resolution to the resolution of your screen.
Then use view -> print size.
I have Photoshop 6. My document windows have nothing at the bottom to triple-click. The % is shown at the top left of the doc window, just to the right of the name. If I double- or triple-click the header, it only minimizes or maximizes.

I was referencing the Mac version, and the ability to set a custom magnification view as I described has been around since version 4, at least.
There must be a way to do it in the Windows version as well. At least I would hope so.
Hey Phos and Nomad, thank you both for the advice. I think Phos is onto a good solution, and I would like to try it. But there’s a hitch: the only "Preferences" I find is accessed by going to Edit/Preferences. There are no options having anything to do with screen resolution, or the setting thereof. I’ve probably overlooked the obvious, but nowhere else do I find a preferences area. I have also looked for screen settings, but have not found that either…

I am in no way meaning to sound like I’m gloating, but to mean I’m a bit incredulous about the platform disparity, and surprised that I don’t remember hearing about it before.
The percentage lives in the Status Bar (Window>Show Status Bar).

I just didn’t have enough info to be convinced that the same custom percentage ability didn’t also live in the Windows version.
And I suppose it’s been there in the Windows version as long as it’s been in the Mac version, right?
Even though I’m a hard-core Maccer, when it comes to Photoshop I want as much complete info about the way it works, regardless of platform.

Karl pointed out that the % figure is in the status bar (at the bottom of the application window) in Version 6.0.
It’s now in the bar at the foot of the image window as shown above.
Highlighting and using the up and down arrows will vary the zoom (+ Shift to go in steps of 10).
That % figure is also "scrubby" just hold Ctrl and wave the cursor over it.
