How Do I make Myself In color && the background of the image black && white && vice versa

Add a Hus/Saturation adjustment layer and take the Saturation slider to -100 to make the whole image black and white. Now take a soft edged brush an "paint" on the mask to bring back the colour into selected parts of the image.
