Problem with grayscale images

I am trying to work on a 16-bit grayscale tiff.

I have change the Colour Palette window to grayscale slider to help working with the image.

When I use the colour dropper to select a specific pixel within the image, this value is shown in the colour palette window in the correct grayscale percentage.

However, when selecting colours using the Colour Picker (for text colour for examle) then the grayscale slider does not appear, instead I have to approximate the exact grayscale using either RGB, LAB, CMYK or HSB, none of which as seems to have a linear relationship to the exact grayscale percentage…

Does anyone know how to get around this problem, or if indeed at least one of the Colour Picker palettes has a linear relationship with grayscale (and where I could find the exact mixes for each grayscale percentage)?
