I’m indexing a book on CS3.

CS3 has the usual kinds of geometric curves, but it also has a Curves adjustment layer, sometimes simply called curves.

In the index, how would you distinguish one from the other?

Geometric curves are obviously:

curves (geometric)

What about the other kind?

curves (adjustment layer)?
curves (level mapping)?

Using Image>Adjustment>Curves affects/modifies the pixels on the applied layer only.
Using a Curve Adjustment layer affects all the layers below the AL in a "non destructive" way, it acts like a filter allowing you to go back into it to and make further adjustments, the underlying pixels remaining unaffected. How you differentiate them is a good question ;}
