I have everything redrawn, but the white book outline. How do I do this? I am assuming I will have to use the Pen Tool, similar to this tutorial

You’re using the wrong tool for the job. It’s going to be tedious, frustrating work, because logo work isn’t best don in Photoshop; this is the sort of thing one ought to use Illustrator for.

If you insist on bashing your head against Photoshop, then pen tool is probably your best bet.

Since you already have it as a JPEG file, though, why are you "redrawing" it in Photoshop?

This is work best done in Illustrator, but for what purpose are you "redrawing" the logo?
