When I spoke with one of the Mac guys, they mentioned that I could exchange my PC version of Photoshop with a Mac (which I plan to buy). Is it possible, if it is, how do I go about the exchange?

you need to call adobe and ask about a "cross-grade" license. if you don’t have the latest version (cs3) you’ll need up do an upgrade to make it happen. if you DO have cs3 i believe (in the past anyway) that it’s only going to cost you shipping.
