Use a hue /saturation layer mask and simply brush in color wherever you want.

or use a brush in color mode and paint w/that. (not as good as donald’s idea, but it’s "another way". 😉 )

note, after you desaturate the image to make it grayscale, you need to set (or be sure it is set) the mode to RGB (image> mode). these ideas won’t work if the image is actually in grayscale mode.
