is there a way to change the default to say .png or anything other than .psd?

It varies with the nature and format of the file to which it is applied.

If you have created layers, you won’t be offered JPEG.

JPEG does not support transparency.

I think the question was,
‘how can I change the default format for
saving to something else than *.PSD ?’

For instance, if I’m saving always as *.TIF,
then I would like an immediate jump to *.TIF.

So far, the default is always *.PSD.
The OP didn’t mention *.JPG.

If you are opening, working on, and saving, repeated files that can be saved as the same type, the type will be sticky and thus act as the default for each successive file.
