Stroke color?

I should know this, but….

How do I add a custom stroke color to a shape created with the round rectangle tool? I tried looking at Edit–>Stroke but the stroke option is greyed out. If I right click the shape and choose blending options, I can check the "stroke" box but then I get the default red color. Not the color I want, obviously. Any chance one of you kind folks could help this lady out. I know I SHOULD know this (and I’m sure I’ve done it before) but for some weird reason I’m drawing a blank.

After checking the Stroke check box in layer styles, you need to actually click on the text ‘Stroke’ next to it to be able to adjust the stroke options (e.g colour).
