I’m a long-time user of Photoshop Elements, and am migrating to CS (because it’s better, and available at work).

I’ve noticed something that PSE does that I can’t (obviously) replicate in CS3, and that I find really useful. When using the Crop tool in PSE, and choosing "Use Original Image Ratio", the crop bounds are constrained to the height/width ratio of the original image, and the resultant image is automatically resized to that of the original image when the crop is completed.

Is there anything obvious I’ve missed in CS3 to replicate this functionality? Is it possible to make it happen through some sort of automation/scripting or something?

The option is there, but requires that you input the measurements or ratio in the options bar top left (with the tool selected). Save it as a preset if you want.

Leave the resolution box blank to avoid messing with resampling.

My ignorance knows no bounds, along with my observational skills – thanks much for your help! Choosing Front Image seems to have exactly the behaviour I was after, though saving as a preset may well be extremely useful as well.
