Clone Stamp? Go over it. It might depend on what is under the date/timestamp. I have had pictures I wanted to do this to and usually cropped them and cut it out. Haven’t had to do it much. Or, zoom way in and replace the pixels that showed it to match those around it. That seems time consuming and might show. I didn’t know you could save them as gif (someone said). Maybe save them as gif, the jpeg or something again. Of course, if it’s your camera, seems like there’s an option to put this on or not before taking pictures. I don’t put it on mine. The date and time is saved with the file. Something new for me to try now, if I can find a picture that has the timestamps on it.

I just found some with the date on them and used the healing brush in PS CS3. But, both of them had a dark, simple background under the stamp (grass, etc)
