I have 75 psd files to flatten, resize and save as JPGs.

Is there a way for me to automate this process via PS7?

Yes. Read the chapter about ‘Actions’.

But the Photoshop CS manual has no chapter on actions or automation. The easiest way to do this is to run Web Photo Gallery and throw away all the stuff you don’t need. Or use Irfanview.

There is indeed not a separate chapter about actions, but page 74 tells how to create one for RAW files, and refers to the help file for further information. The help file has a complete chapter about ‘Automating Tasks’.
