Best practice in preparing photos for print media?

I am prepping (using PS7) a large number of photos to be used in a print catalog, which is being produced on PageMaker7. If the photos are saved with a CMYK setting, the file sizes are very large and creates problems for proofing the pages on PageMaker (since each catalog page has multiple photos).

What are the practical consequences of delivering photos created in the RGB mode when the file is sent to the printer for final production?

What is the best way for handling this kind of work?
