Help for a new person – how to cut shapes out of a photograph?

Hi: I am working on Illustrator CS2 for Windows and have been struggling with this question for awhile:

If I have a photo (a jpeg or eps file) or other image and I want to ‘cut’ a shape, like a square or circle, out of a section of that image, how do I do this?
