Could someone please help me on how to change a cmyk jpeg image to a 1 spot colour in photoshop 7? Really would help me out!

Open the channel window, toggle the arrow and select new spot channel. A new window will open. Double click the color box and choose which color. Once you have your new spot channel, copy from your cmyk and paste into spot channel.

Convert to grayscale and then to duotone choosing the monotone option.

If you’re going to be placing this in a pagelayout application can simply place the grayscale image and apply the color there.
