Use the Type mask tool (under the Type tool) Type the text you require, press enter and it converts to a selection, select the layer you want to copy from, the text will then be on that layer as a selection, press control J and you have your text filled with the image on a new layer!

There are better ways.

Instead of pressing Control-J, one better way is to hit the Mask widget in the Layers palette, or choose Select->Save Selection, and in the Save Selection dialog, choose Layer Mask. Whenever possible, you should use layer masks instead of Control-J, in case you change your mind later.

Or, make a normal text layer, move it below the image layer, and turn it into a clipping layer by holding down Control and Alt on the keyboard and clicking on the line separating the text and image layers in the Layers palette. This way, you can still change the text later, if you want.

and if you use "paste into" you can move the background art under that mask for more control of what shows
or fill with pattern history etc
